Excavations have revealed that as early as 2000 BCE (when the Bronze Age had just begun), beet leaves were eaten and offered in the Old World. The plant grows wild along oceans and seas, but cultivation also thrives well in clay soil. Harvest the thick leaves in time for a very healthy salad (vitamin A, C and many minerals) and enjoy the fresh, crisp "bite"!
