Valerian is a versatile plant: many edible parts, medicinal, and mind-altering. Be careful with its use and also prepare for easy, vigorous growth of this hardy plant. The seeds are edible, and an important oil is made from the leaves and roots, which provides a spicy taste to ice cream and baked goods.
Dried roots are used for a preparation that provides the well-known calming effect, but read up carefully on the limitations: dangerous for liver patients and risk of addiction, etc.
The plants can spread aggressively, so surrounding them with root barrier fabric or planting them in a large tub is recommended. They grow to about 1 m high with beautiful pinnate leaves and light pink flowers in an umbel shape.
