Attractive and tasty! This perennial but non-hardy leafy vegetable has half purple, half dark green leaves that make a delicious addition to salads, or can be (briefly) cooked or stir-fried like spinach. Okinawa Spinach can thrive all summer in a sunny or partially shaded spot in the garden or a pot. Always ensure sufficient water.
