We searched for the tastiest violet with the widest range of culinary possibilities. Here it is: the Sweet Violet. Its young leaves make a delicious salad when combined with a pungent addition such as mustard greens or arugula. The flavourful, perfumed flowers belong on top of the salad, elegant and surprisingly tasty. The leaves have a thickening effect in soups, similar to okra. A calming tea can be brewed from the flowers and leaves. Give the plants a shady spot; they will quickly find a good place in the garden and bloom every year in late winter or very early spring.
