Grass species from Indonesia with broad, lance-shaped leaves. The plant is hardy to Zone 9, meaning it tolerates light night frost. Its distinctive inflorescence emerges from the leaf axils: a round, spherical fruit, white and hard like a pearl, followed by a short plume. After drying (let it ripen in the field first), it's obvious that the seeds are used as beads. Just as well-known are the culinary qualities of Job's Tears: the seeds are boiled and, due to their mild, pleasant taste, make a good addition to soups; with a large harvest, they are a good substitute for wheat or rice. Roasted seeds make a decent surrogate coffee, and the seeds can also be fermented into beer or wine. The high protein content is quite remarkable. Height 60-80 cm.
