As with other members of the Amaranthus genus, the tender leaves of especially young plants can be eaten like spinach. When the flower clusters ripen, the seeds can be harvested: very healthy (for example, popped in the oven at 130°C) in muesli. The newly germinated seeds (sprouts) are also healthy and nutritious. The seeds can also be baked into bread or cooked with rice. This variety is better known in the Netherlands as an ornamental plant, and not without reason: in fertile soil (with sufficient moisture), the plant grows up to 2 m high and adorns itself with wine-red, drooping clusters: an ornament and a significant space-filler in the garden, but also a very strong and elegant cut flower.
