The very special Shii Take, also known as Shiitake or Chinese mushroom, has been cultivated and praised in Japan for centuries for its special nutritional properties. According to Japanese tradition, Shii Take is often grown on wood about 10-15 cm thick and 100 cm long. This mushroom becomes light to dark brown with white or light brown scales on the cap, and can grow to 5-15 cm. The harvest is in late spring and autumn and is quite spread out.
Shiitake grows best on native Oak and reasonably well on Birch, Beech, Alder, Hazel, Black Locust and Sweet Chestnut
