Opperdoezer Ronde is a potato variety grown exclusively around the North Holland village of Opperdoes. This variety thrives only on the higher-lying, sandy loam soils in this region of North Holland. In Opperdoes, from 1860 onwards, mainly "nine-weekers" were cultivated, a fast-growing potato that could be harvested early in the season. These nine-weekers were crossed with variations of the plant grown from seed balls by the Andijk market gardener J. Sluis. The result was initially called 'De Sluis'. Through selective breeding of this potato, the Opperdoezer Ronde was created. It is a waxy cooking potato with a yellow skin. Officially, the description is: "a yellow/white fleshed, somewhat irregularly shaped, oval-round, deep-eyed tuber with a relatively low starch content". For this reason, the Opperdoezer Ronde is considered a delicacy by connoisseurs. The potato contains many vitamins and high-quality proteins. Because the potato is waxy, it is suitable for both boiling and baking. Due to its extremely delicate thin skin, the potato is harvested by hand by the growers. The first potatoes can be harvested as early as May if they grow in plastic tunnels. Potatoes in a greenhouse can even be harvested in April. The entire harvest is certainly out of the ground before the end of September, which makes the Opperdoezer Ronde an early potato. The Opperdoezer Ronde is a protected designation of origin.
