Although primarily known as a fiber crop, jute is the most important leafy vegetable, especially in Egypt and Sudan. Almost everywhere in the tropics, the young vitamin-, calcium-, and iron-rich leaves of jute are eaten. The mild, tender leaves wonderfully thicken your soup or are a delicious addition to salads. Any excess leaves can be dried for a winter stew.
