Valerian is a versatile plant: many edible parts, medicinal, and mind-altering. Be careful with its use and also prepare for easy, vigorous growth of this hardy plant. The seeds are edible, and an important oil is made from the leaves and roots, which gives ice cream and baked goods a spicy flavor.
Dried roots are used for a preparation that provides the well-known calming effect; read carefully about the limitations: dangerous for liver patients and risk of addiction, etc.
The plants can proliferate, so surrounding them with root barrier fabric or planting them in a large container is recommended. They grow to about 1 m high with beautiful pinnate leaves and light pink flowers in an umbel shape.
