The maggi tree can be maintained as a shrub by heavy pruning or pollarding. In China, this tree has a strong symbolic character and represents the father figure. The leaves are harvested young and have been a popular vegetable in China for centuries, known as Xiang Chun Ya (=Vegetable Tree). The taste is herbaceous like maggi and aromatic like onions. The leaves are briefly stir-fried and then used to flavour salads and dishes with egg or meat. Very winter hardy in our climate. Koppert Cress sells microgreens of this species under the name "Tahoon Cress"
