Beautiful, robust plant (80 cm) with large grey-green leaves. The almost spherical flower clusters are light lilac-pink and develop into elongated, parakeet-shaped (and thus amusing) fruits. When the fruits are ripe, dark brown seeds emerge on fluffy parachutes.
Many parts of the plant are edible: the flower buds can be eaten raw or cooked and taste like peas, delicious in soup. Young shoots and leaves are eaten cooked and resemble asparagus; "Native American" tribes ate them raw. Young fruits are very tasty and can also be eaten raw or cooked. The flowers are cooked into a sweet syrup; they can also be eaten raw, as can the seeds. The plant sap is the basis for a vegetable chewing gum.
The plant sap and roots are used in natural medicine...
Don't forget the many insects (bees, butterflies, etc.) that love the flowers! What a top plant!
