In Japan, these very finely-leaved annual plants are widely used as a flavoring in salads. They grow wild in saline marshes there, but they also grow perfectly well in fresh water! Height 30-50cm. The young leaves have a pleasant fleshy, crispy texture. Delicious in salads and sushi; the stems are usually briefly boiled or placed in boiling water, just like snow peas. Rich in vitamins and minerals. (See also Monks' Beard or Italian Samphire)
