Hermine is a relatively new shallot variety, quite early to harvest, and originally from France. This delicious, mild-tasting shallot is unique in its kind due to its white skin color. The variety produces very consistent, round shallots with strong skin. Additionally, this variety can be grown in any soil type and is suitable for several months of storage.
Shallots belong to the onion family and, like garlic, grow in a cluster of "cloves". The white interior is sometimes streaked with red and/or purple. They have a strong, rich flavor. Shallots cause fewer intestinal and respiratory problems than onions and garlic. Many recipes and facts can be found at www.shallot.com
