These flattened, brilliant white onions have a beautiful historical French tradition. They can be sown from spring onwards and harvested in summer or autumn, but the nice thing about this variety is its excellent frost resistance. In the past, the onion was therefore sown around Vaugirard (formerly the market garden of Paris) at the end of summer, the young plants overwintered, and in early spring, the flat white onions with fresh and firm leaves were sold in Les Halles.
A few hobby farmers still grow this specialty for the French, who have a historical awareness and refined taste...!
