We've found a truly sweet onion again! Originally from Corsica, this type was rediscovered by an American farmer in 1925. This onion has a remarkably mild and sweet aroma, lacking the pungent compounds (which also cause "crying"). This makes the bulb as crisp as an apple; you can simply eat it raw! The pleasant onion flavour is very suitable for children. Walla Walla Sweet is always used as a winter onion in the western US; seedlings can tolerate up to 10 degrees of frost. Around Walla Walla (a town in the Northwestern US), the seeds are sown in August-September to provide bunches of young plants to garden centres the following spring, just like "set onions" in the Netherlands. Please note: it is not a storage onion, so about 1 month after harvesting, chop, dry, and freeze the rest. Freezing makes them a bit watery, and you should consider that it takes a little longer to brown the onion pieces, but the mild, sweet taste is preserved.
