In France, these tubers are called: Jambon Végétal, which is Vegetable Ham! The branched tubers of this beautiful plant are salmon-pink inside and are eaten in slices after cooking. Or chopped into soups, possibly instead of meat..... delicious! Sow in autumn or early spring, harvestable in October. The following year they will flower with the well-known yellow flower clusters. The seeds contain a valuable edible oil. This is also rich in gamma-linolenic acid, a plant acid used in cosmetics.
