This sturdy mini head of cos lettuce is very popular: crispy and quite sweet! Due to this quality, it is also called Sucrine lettuce. The English call this variety Sugar Cos. Sugar because of its sweetness and Cos because the Romans discovered it on the Greek island of Kos. Due to its short growing period, this variety can be sown late.
Fortunately, cos lettuce is back in the spotlight! We are discovering this crispy, slightly spicy lettuce as a delicious raw product. Cos lettuce is healthy and grows easily. In the past, the heads were tied together a few weeks before harvest to make them more tender, hence the name. Nowadays, we are used to the taste and even appreciate a little bitterness in raw vegetables. In the past, this lettuce was even briefly cooked in the Netherlands and owes its old nickname "stoofsla" (stew lettuce) to this. The Romans already ate this lettuce, so it is truly a historical type!
