This Italian Cos lettuce can be used for all cultivations: spring to autumn, with its stress resistance being notable in summer. Heat and drought often cause "bolting" (forming flower stalks), but this variety doesn't do that quickly. Lenta (slow) a montare (to bolt) indeed...! The result: firm, full heads that are tender and yellow in the heart. Slightly sweet, crisp, and with the characteristic bitterness.
Fortunately, cos lettuce is back in the spotlight! We are discovering this crisp, slightly spicy lettuce as a delicious raw product. Cos lettuce is healthy and grows easily. In the past, the heads were tied together a few weeks before harvesting to make them more tender, hence the name. Nowadays, we are accustomed to the taste and even appreciate a little bitterness in raw vegetables. In the past, this lettuce was even briefly cooked in the Netherlands, which is where it got its old nickname "stoofsla" (stew lettuce). The Romans already ate this lettuce, so it's truly a historical type!
