This is how a common wild plant (to some, a weed) suddenly becomes very decorative and connects us to a distant past. Instead of flower spikes, the plant's stems produce tender and decorative rosettes which, upon closer observation, are true works of art, like green roses. The plants are perennial, and the rosettes and leaves are highly prized by chefs for their taste and, of course, their unique appearance. Briefly blanching them, like raw snap peas, makes the flavour accessible. The first drawings of this peculiar mutation appeared as early as the late 15th century, so the plant certainly witnessed the Middle Ages!
