The Urfa Biber pepper plant, originating from the Urfa region in Turkey, is known for its special peppers with a rich, smoky flavor and a slight sweetness. The plant grows to a medium height and thrives in warm climates. The fruits start deep red and change color to a dark, almost black-purple hue as they ripen.
What makes this pepper unique is the traditional processing after harvest: the peppers are dried in the sun during the day and wrapped at night, causing them to "sweat." This process gives the pepper its characteristic deep flavor and color.
With a mild to medium heat (approx. 5,000–10,000 SHU), Urfa Biber is widely used in Turkish cuisine, especially in meat and savory dishes such as kebabs and stews. The taste is warm, slightly smoky, and subtly sweet. Additionally, the pepper is increasingly used in sweet applications, such as desserts, where it pairs well with chocolate and coffee.
The ripening time is approximately 70–90 days. The peppers are often dried and processed into flakes, but can also be used whole.
