Nora peppers are red to dark red in colour and are almost spherical, but slightly tapered. The plants grow to about 60 cm high. Nora is very tasty fresh and is often used as a stuffing pepper. They are only a touch hot, so good for beginners... Of course, cut out the seeds and seedpods.
This was one of the many peppers Columbus brought back from the New World. It is said that he left it with monks in the Yuste monastery, who then spread it among their brethren in the municipality of La Nora in Murcia, Spain. The main cultivation area of the Spanish Nyora or Nora peppers is in the Valencian region of Guardamar. It is primarily used there to make a dried Spanish paprika powder, called Pimenton, which is mildly spicy. This powder is used to flavour and (red) colour many dishes. It is the main ingredient in Bacalao a la Vizcaina, a Christmas dish of cod and potatoes. They are also used to flavour sausages, added to Paella stew and are widely used in Romescu sauce.
