Rare (and) beautiful, this salmon-yellow, peach-colored Aji Charapita is very tasty, but also quite hot! The plants bear hundreds of round fruits per plant. They grow upright on the plant, and the common wild variety is very popular in Bolivia and Peru. In almost every little eatery, you will be offered a serving of “Criolla,” a mix of sliced red onions, lemon juice, salt, water, and crushed Charapitas: very tasty! People who are unfamiliar with this pepper often think that those round little balls are corn or beans—be careful when you are in South America... They are about as hot as the wild Tépin pepper!
