Sweet, white root, cultivated for centuries. Parsnip remains have been found in Switzerland and Southern Germany during excavations from the Stone Age (9000 BC and later). Parsnips became truly popular as a cultivated crop around the turn of the millennium in Roman times in Italy. They are quite frost-resistant, and their flavour is enhanced after they have been exposed to frost. Please note: in warm and sunny weather, the leaves can cause irritation when harvesting.
