A little frost gives all Brussels sprout varieties a milder taste because starch in the sprout is converted into sugar. The sprouts can also be frozen to achieve a similar effect. Before freezing, they should be blanched in boiling water for about three minutes. In this way, Mother Nature can be approximated to achieve that (even) milder taste.
