In a fine collection of historical Brussels sprouts, an old American variety should not be missing. Since about 1890 and still, this “Brussels Sprouts” is a popular variety among hobbyists in the States. The taste is not too sharp, but distinctly aromatic and nutty. Noteworthy are its rather compact growth and good frost resistance.

A little frost gives all Brussels sprouts varieties a milder taste because starch in the sprout is converted into sugar. The sprouts can also be frozen to achieve a similar effect. They should then be blanched in boiling water for about three minutes before freezing. In this way, Mother Nature can be approximated to get that (even) milder taste.
