A light frost gives all Brussels sprouts varieties a milder flavor because starch in the sprout is converted into sugar. The sprouts can also be frozen to achieve a similar effect. Before freezing, they should first be blanched in boiling water for about three minutes. In this way, Mother Nature can be approximated to obtain that (even) milder taste.
