Leaf cabbage is very strong and frost-resistant. In our country, kale is particularly well-known, but in many countries, smoother varieties that grow in rosettes are common. English speakers collectively refer to this group as "Kale." This (now historical) cultivar originates from the province of Sutherland, North Scotland. A certain Elizabeth Woolcombe received this cabbage around 1950 from Angus Simmonds, who conducted research on leaf cabbage at Edinburgh University. Since then, this top performer has been renamed 'Sutherland Kale'. We find many enthusiastic stories about it online! The leaves are tender like spinach and can be harvested well into winter. Tougher leaves are delicious in a stew. In a harsh winter, harvesting will temporarily stop. In spring, the plant regrows, and even the flower buds are delicious (like broccoli)!
