Hawk's Beard

  • Product number: 120100
  • Origin: Europe
  • Latin: Crepis biennis

All parts of this (somewhat common) wild plant are edible. The ray florets ("petals") can be added to salads, the root can be briefly stir-fried, and especially the young leaves are deliciously tender and mild in flavor when added to salads. In spring, it's worth blanching the plants during their first growth, similar to dandelion greens, for an extra tender effect. The flowers somewhat resemble our dandelion, but the plant is taller (40-120 cm high). The rosette of leaves is at the base of the plant.
