How beautiful that will look on your plate... and very tasty to boot! Thanks to Dr. Calvin Lamborn, who worked tirelessly into his old age to develop new and improved Sugar Snap Peas. After 10 years of hard work, he developed a true purple-colored sugar snap pea. You harvest them when the pea has just developed; blanch them briefly and enjoy them, pod and all. The purple color, of course, remains. The 5-6 cm long pods grow on 60 cm high plants that grow well independently, requiring no support.
Deliciously sweet and with a soft skin. You don't need to shell the peas, just remove the tips and string. Do pick them reasonably young. Stew them briefly or eat them raw in salads!
