This fertile hybrid belongs to the Cousa type, a traditional Middle Eastern type with a neck, a slightly fatter belly, and a beloved sweet and nutty flavour with a fine texture. The charm of Zephyr is its two-tone colour: yellow with a green belly.

Courgettes can be grown outdoors without any problems. This variety does not trail; the fruits grow from the centre of
the plant. Harvest the fruits young to very young for consumption. For ornamental purposes, let them grow larger; then they can be stored.

(Too) big a harvest? Sauté a quantity of chopped zucchini, onions, and garlic. Then purée and freeze. After thawing, this, together with broth, forms a great base for soups. If the zucchini has grown a bit too large: Peel and deseed, then completely peel into ribbons with a vegetable peeler or cheese slicer. Sprinkle with salt and let drain. Then mix well with two generous tablespoons of chopped chives, the same amount of burnet leaves, and the same amount of mayonnaise. Here you have a delicious salad for about 4 to 8 people, depending on the zucchini. Per 15 cm of zucchini length and a circumference of 25 cm, it's enough for 1 to 2 people, depending on whether it's a main course or a side dish...
