(Too) large harvest? Bake a quantity of sliced courgettes, onions, and garlic. Then purée and freeze. After thawing, this forms a good base for soups when combined with broth. If the courgette is a bit too large: Peel and deseed, then peel completely with a vegetable peeler or cheese slicer to create courgette ribbons, beautiful white strands. Sprinkle with salt and let drain. Then mix well with two generous tablespoons of chopped chives, the same amount of burnet leaves, and the same amount of mayonnaise. Here you have a delicious salad for approximately 4 to 8 people, depending on the courgette. Per 15 cm courgette length and a circumference of 25 cm, this is enough for 1 to 2 people, depending on whether it's a main course or a side dish...
