(Too) large a harvest? Sauté a quantity of sliced zucchini, onions, and garlic. Then purée and freeze. After thawing, this, along with broth, forms a great base for soups. If the zucchini has grown rather large: Peel and deseed, then peel completely into ribbons with a vegetable peeler or cheese slicer, creating beautiful white strips of zucchini. Sprinkle with salt and drain. Afterward, mix well with two generous tablespoons of chopped chives, the same amount of burnet leaves, and the same amount of mayonnaise. This makes a delicious salad for approximately 4 to 8 people, depending on the size of the zucchini. Per 15 cm of zucchini length and a circumference of 25 cm, it's enough for 1 to 2 people, depending on whether it's a main course or a side dish...
