(Too) large harvest? Bake a quantity of sliced courgettes, onions and garlic. Then purée and freeze. After thawing, this forms a good base for soups when combined with stock. If the courgette is a bit too large: Peel and deseed, then peel completely with a potato peeler or cheese slicer, to create courgette ribbons, beautiful white strands. Sprinkle with salt and drain. Then mix well with two generous tablespoons of chopped chives, the same amount of pimpernel leaves, and the same amount of mayonnaise. Here you have a delicious salad for approximately 4 to 8 people, depending on the courgette. Per 15 cm courgette length and a circumference of 25 cm, this is enough for 1 to 2 people, depending on whether it's a main course or a side dish...
