(Too) large a harvest? Sauté a quantity of sliced courgettes, onions, and garlic. Then purée and freeze. After thawing, this, together with broth, forms a good base for soups. If the courgette is a bit too large: Peel and deseed, then shave the entire courgette with a peeler or cheese slicer, creating courgette ribbons, beautiful white strands. Sprinkle with salt and let drain. Then, with two generous tablespoons of chopped chives, the same amount of pimpernel leaves, and the same amount of mayonnaise, mix well. Here you have a delicious salad for approximately 4 to 8 people, depending on the courgette. Per 15 cm courgette length and a circumference of 25 cm, this is enough for 1 to 2 people, depending on whether it's a main course or a side dish...
