Beautiful little roses on your plate! This chicory, both in Italy and in France, is a much-used vegetable from bygone times. Like many forgotten vegetables, this variety is enjoying a well-deserved comeback...!
The wine-red loose heads are sown in rows, preferably directly at their final location or in peat pots. Harvesting can start when they are very young, like spinach, even as a microgreen. For bleached cultivation, the plants need more space to develop a good root. You harvest the roots in stages in autumn and winter, cut off the red foliage (delicious as a stew) and place the root in a dark bucket or pot with some garden soil. The bleached loose leaves can be harvested for a long time and are deliciously tender!
The chicory family includes endive, frizzy endive, and various types of chicory. Characteristic is the more or less present "bitterness", formerly detested and now highly appreciated. Let a plant "bolt" sometime: chicory flowers are usually beautiful blue in color and smell of vanilla!
