The bigger brother of other vegetables within the goosefoot family: Good-King-Henry, strawberry spinach, and quinoa. The tender, young leaves of this impressive plant (1-1.5m!) have a decorative, pinkish-red leaf attachment, which fans out into a powdery sheen over the entire leaf. The red-green stems and the pinkish-red flowers also contribute to its ornamental value. The young leaves are tender and... beautiful in salads! Briefly boiled, they make a traditional spinach.
