This rare, exceptionally coloured bean originates from Southeast Europe (our discovery site: the Rhodopes in Bulgaria). As a young bean, it is a tasty green bean; when ripened, you harvest the beautiful beans: white with a mocha-coloured field and cherry-red stripes within it... That's why we gave it this name. The colour alone inspires culinary ideas! A rather late-ripening climbing bean. Ultimately, this bean comes from America, and its resemblance to the equally late 'Papa de Rola' or 'Dove's Breast' is striking. 'Indian Shield Figure' or 'Hidatsa Shield Figure' differs slightly in colour and is probably harvestable earlier.
Dry beans are harvested in various ways. Some varieties can also be eaten with the whole pod, while others can only be eaten fresh or (ripened) dry. Tip for storing dry beans: to prevent any bean weevil eggs from hatching, place the well-dried beans in the freezer for 24 hours.
