Well-known Spanish white bean with a special shape: quite straight and elongated like a short piece of chalk. When dry, they are 2.5 cm long and 7 mm thick; when cooked, they expand further. This climbing bean originally comes from Northern Spain (Asturias), and we sell the original bean, which is sold for a very high price in some places. Make a delicious Fabada with it (recipes can be found online)! They melt velvety on the tongue…
Dry beans are harvested in different ways. Some varieties are also edible with the whole pod, while others can only be eaten fresh or (mature) dry. Tip for storing dry beans: to prevent any bean weevil eggs from hatching, place the well-dried beans in the freezer for 24 hours.
