The beautiful, egg-shaped beans are half white and half beige with chestnut-brown spots and speckles. The beans have a mild and soft taste, ideal for adding a delicious sauce or making a healthy bean soup! You can also easily shell the beans fresh for a delicious flageolet bean.
Fun fact: these beans are also called 'Dove's Breast' because of their speckled, dove-colored, egg-shaped beans. This bean has been a beloved bean for several centuries, especially in Portugal and Latin America. But they are also known in France under the name Haricot à Rame à Écosser 'Coco Bicolore Prolifique' and have been found in catalogs there since 1888. The plants climb, so it's a pole bean.
