As with other members of the Amaranthus genus, the tender leaves, especially from young plants, can be eaten like spinach. When the flower clusters ripen, the seeds can be harvested: very healthy (e.g., popped in the oven at 130°C) in muesli. Freshly sprouted seeds (sprouts) are also healthy and nutritious. The seeds can also be baked into bread or cooked with rice. This variety is better known in the Netherlands as an ornamental plant, and rightly so: on fertile soil (with sufficient moisture), the plant can reach a height of 2 m and adorns itself with wine-red, hanging clusters: an ornament and a significant space-filler in the garden, but also a very strong and elegant cut flower.
