How versatile can a plant be: in the tropics, it's a popular "spinach" and "grain"! The large leaves are wonderfully tender after stir-frying or boiling. Surinamese people call it "Klaroen," but the vegetable is also known as Calalu, Bayam, Bitekuteku, or Hing Choi. The hanging, green flower clusters (80 cm tall) are very decorative in bouquets, and after ripening, the very fine seeds become available, which are cooked into a healthy couscous! Because a portion of the seeds is usually swallowed whole, there's a beneficial effect on intestinal function.
