A perennial plant that forms oval tubers at the end of the year. The taste is slightly sweet and nutty; eat them boiled, fried, or baked. As many members of this genus are poisonous (like many relatives of the potato), the tubers should not be eaten raw! Transplant and divide the plant regularly; it looks good in the garden: white umbellate flowers at 1 m high and often persistent winter foliage.
Besides the Lesser Earth Chestnuts, there are two other species also called Earth Chestnut, the difference is clearly visible: Bunium bulbocastanum or Greater Earth Chestnut and Conopodium majus, the French Earth Chestnut, both form only one, somewhat larger tuber per plant. These two types of Earth Chestnut may be eaten raw.
