Pandanus amaryllifolius, or pandan for short, is a tropical plant that eventually grows into a palm-like tree, hence its common name 'screw pine'. The plant is rare in the wild but is widely cultivated as a flavoring for Southeast Asian dishes. Because it rarely flowers, it is usually propagated by cuttings.
Use in dishes
The leaves, fresh or dried, are primarily used in the preparation of Thai and Indonesian rice and curry dishes, imparting a somewhat nutty flavor. To transfer the flavor, the leaves are sometimes cooked along (bundled, so they can be easily removed again) or, for example, first soaked in coconut milk which is then added to the dish later. The leaves can also be fashioned into a basket in which rice is then cooked or steamed. In a Thai chicken dish, the chicken is wrapped in the leaves and then cooked.
Another well-known dish with pandan flavor is pandan cake – a very airy sponge cake that originally derives its light green color from the chlorophyll in the juice of the fresh pandan leaves used, but nowadays is usually made extra green with food coloring – partly because colorless pandan extract is often used instead of fresh leaves.
Other applications
Various positive properties are attributed to the plant, such as a healing effect against various tropical ailments, antiviral action, anti-allergenic, anti-inflammatory, and so on, which means the plant also finds application as a raw material for medicinal products and sometimes also has a religious meaning.
In Oceania, the plant, along with other variants, is used much more broadly than just in the kitchen, and other parts than the leaves are used as building material for homes, raw material for clothes and textiles or decorations, and tools for fishing are made from it. (Source -largely-: Wikipedia)
Care
The plants are not winter-hardy and must serve as houseplants indoors from September, not below 15°C and in good light. From late May to early September, the plants can be placed outdoors in a semi-shady spot.
