Elephant garlic resembles common garlic but forms much larger bulbs (up to 500g) with 5-6 enormous cloves. A beautiful crop, which, like great-headed garlic, is actually closer to leek than to garlic. The flavor is strong enough to evoke garlic, mild but with some garlic aromas. The plants can grow quite large; give them a well-drained spot with plenty of humus, preferably in raised beds. Elephant garlic is winter-hardy and usually only flowers in the second year. After the purplish-pink flowering (1-2 m high), the bulbs can be harvested. In China, this crop is harvested before flowering, which is why it often contains only 1 single bulb, but waiting an extra year yields better results. An ideal crop for permaculture!
In the autumn, we buy out our growers completely, but demand has always been greater than supply so far, so don't be angry if you have to wait until spring, then we sell our imports from Chile, which are also of very good quality…
In the autumn, we sell the cloves from a large bulb as well as the side bulbils that have formed next to the large bulb; both grow into full-fledged elephant garlic.
