One of the most well-known harbingers of spring in our region is introduced by the wild plant Lesser Celandine. Loved and loathed, but with incredible properties! Don't plant it in a neat garden, as it's a weed, but in a large pot, Lesser Celandine will behave perfectly for years... The young leaves are refreshing in a salad, and slightly older leaves need to be heated and can be stir-fried like spinach. The tubers can also be stir-fried! The flower buds are a good substitute for capers! A shady spot is no problem; enjoy the buttercup-yellow flowers in spring... Lesser Celandine belongs to the buttercup family.
