What stands out first is its beautiful, deeply incised, grey-green foliage with a strong lemon aroma. It is a Southern European plant, which, like lavender and rosemary, is actually a shrub (woody), but in our climate, it rejuvenates itself through annual pruning. Place the plant in a sunny and not too wet spot, and it will be your companion for years! Its slightly bitter aftertaste was a reason in the Middle Ages to incorporate the plant into rich dishes for better digestion. Not a bad choice, as moderate use is good for the gastrointestinal tract. A yellow dye is extracted from the plant. In 1792, absinthe, made from lemon herb among other ingredients, was invented by a French doctor. It was intended as a medicine but became a popular drink. The famous herbal liqueur was temporarily banned due to its calming side effect, which was mistrusted; a tea made from lemon herb (and additions for taste) is still calming. Excess can be harmful!
