How versatile can a plant be: in the tropics, a popular "spinach" and "grain" variety! The large leaves are delightfully tender after stir-frying or boiling. Surinamese people call it "Klaroen," but the vegetable is also known as Calalu, Bayam, Bitekuteku, or Hing Choi. The drooping, green flower clusters (80 cm tall) are very decorative in bouquets, and after ripening, the very fine seeds become available, which are cooked into a healthy couscous! As part of the seeds are usually swallowed whole, there is a beneficial effect on bowel function.
