AVAILABLE IN WINTER UNTIL STOCKS ARE DEPLETED. AFTER JUNE, THE TUBERS WILL BE POTTED AND SOLD WITH A SURCHARGE OF €1.00.
Fortunately, more and more people are familiar with this unique tuber! In South America, it is the most important root crop after the potato. Especially around the Andes Mountains (Ecuador, Peru, and Colombia), this tuber has been popular for centuries and cultivated by the indigenous people. Like the Yam Bean, the tuber retains its crispy texture after (brief) cooking. The tubers are unsuitable for baking or frying due to their high moisture content. The leaves are edible as spinach, just like sweet potato and basella (the Ulluco is related to the latter). The plants crawl or climb with tendrils and are not winter hardy. Watch out for slug damage; cultivation in raised beds or pots works very well due to better soil warmth. The harvest is late in autumn; some protection with fleece, for example, helps with tuber setting, especially if September and October are cold and bleak. 'Ravelo Lisa' is mint green, round, early to harvest, and yields a very high crop.
