What can you sow now for the winter under (fruit) trees? A good solution: chervil is a typical "grows-everywhere" plant. Sown until the end of August, chervil stays green all winter, the plant grows in sun or shade and is not affected by tree competition. Regularly throw some leaves into your soup... delicious!
To avoid depleting your valuable soil, it is wise to leave the soil fallow occasionally. During such a period, green manure is ideal: it adds nutrients to the soil through often present nitrogen fixation; it suppresses weed growth, promotes bacterial life, provides humus, and in some cases, works against harmful nematodes.
